Dhaba-Style Milk Sev Bhaji

 Ingredients:

  • 50 grams sev (thin Bikaneri bhujia)
  • 1 cup milk
  • 1 tomato
  • 1 onion
  • 1 green chilli, chopped
  • 1/4 teaspoon garam masala
  • 1/4 teaspoon coriander powder
  • 1 pinch turmeric
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cumin seeds
  • 2 teaspoons oil
  • 1/4 teaspoon salt

Milk Sev Bhaji Method:

 First, heat oil in a pan. Add cumin seeds and let them splutter. Add finely chopped onions and cook until golden brown.

Remove the seeds from the tomato, chop it finely, and add it to the onions. Fry the mixture for 2 minutes.

Next, add all the spices and cook for 2–3 minutes, mixing well. The mixture will begin to thicken, so add half a cup of water and cook for another 1–2 minutes.

Now add the milk and let it boil for 2–3 minutes. Keep stirring continuously, otherwise the milk may curdle.

Finally, add the sev and cook for 3–4 minutes.

Your Dhaba-Style Milk Sev Bhaji is ready. Serve hot with parathas or roti.
