Gram Flour Barfi

Ingredients:
- 200 grams gram flour,
- 100 grams desi ghee,
- 100 grams sugar,
- 1 tablespoon milk,
- some finely chopped dry fruits,
- cardamom powder,
- and a few strands of saffron (optional).
Gram Flour Barfi Method:
- First, place the gram flour in a bowl. Add 1 tablespoon of ghee and 1 tablespoon of milk. Mix them well, kneading the mixture with your hands to make a dough. If needed, add a little more milk to form a smooth dough. Cover it and let it rest for 10 minutes.
- After 10 minutes, break the gram flour dough into small pieces. Now, add pure ghee to a pan and heat it slightly. Once the ghee is warm, add the dough pieces. Keep the flame on medium-low and press them down with a ladle. After some time, the dough will loosen completely and turn into a granular texture. Continue roasting until it gives off a pleasant aroma and changes colour.
- It will take about 15 to 20 minutes to roast the gram flour properly. When it begins to smell fragrant, transfer it to a bowl. Using the same pan, prepare the syrup for the Barfi.
- To make the syrup, add sugar and one cup of water to the pan. Cook until a sticky syrup forms; it will take about 5 to 7 minutes. Then add cardamom powder, saffron strands, and finely chopped almonds. Mix everything well.
- Now, add the roasted gram flour to the syrup. Stir continuously until the mixture reaches a setting consistency. Turn off the heat and transfer the mixture to a greased plate, tray, or tin.
- Press it down evenly with a spatula to form a smooth surface. Garnish with finely chopped almonds and press them gently with a ladle or spatula so that they stick well to the Barfi. When it cools slightly, make slits with a knife.
- Once the Barfi has cooled completely, cut it into pieces. Use it for at least 15-20 daysas per your wish.
