Aloo Kofta

Ingredients for the Koftas:
- Potatoes 400 grams (boiled),
- arrowroot 04 tablespoons,
- green coriander 01 tablespoon (chopped),
- cashews 10 (finely chopped),
- oil for frying,
- salt according to taste.
Ingredients to Make the Gravy:
- Tomatoes 04 (medium size),
- cream 1/2 cup,
- oil 03 tbsp,
- green chili 02,
- green coriander 01 tbsp (chopped),
- ginger a piece of one inch,
- coriander powder 01 tsp,
- cumin seeds 1/2 tsp,
- turmeric powder 1/4 tsp,
- red chili powder 1/4 tsp,
- garam masala 1/4 tsp,
- salt according to taste.
Method of Preparation:
First of all, peel the potatoes and grate them. After this, add arrowroot, salt, green coriander and knead it like flour. Now heat oil in a pan. While the oil is heating, take some potato mixture and place 2-3 pieces of cashew in the middle and then make it round.
Make balls of all the potato mixture in the same way. When the oil is hot, put the potato balls in it and fry them till they become light brown.
Now prepare the gravy. For this, first grind tomatoes, green chilies and ginger finely in a mixer. After this, beat the cream thoroughly. Now heat oil in a pan and add cumin seeds to it. After that add turmeric powder, coriander powder, red chili powder and fry it lightly. Then add tomato paste to the pan and fry it well. After this, add cream to the pan and fry it until it leaves oil.
Now put 2 cups of water in the pan. Also add salt as per taste and let it cook till it boils. When it starts boiling, put the koftas in it and after cooking for 2 minutes turn off the gas and serve with hot roti or tasty pulao.
