Semolina Uttapam

Ingredients:

  • Semolina – 1 cup,
  • curd – ¾ cup,
  • 1 tomato (chopped),
  • ½ cup cabbage (chopped),
  • ½ cup capsicum (chopped),
  • 1 green chilli (chopped),
  • green coriander – 2–3 tablespoons,
  • 1 teaspoon grated ginger,
  • baking soda – as required,
  • mustard seeds – ¼ teaspoon,
  • oil – 2–3 tablespoons,
  • salt – as per taste.

Method of Preparation:

First of all, put semolina in a large vessel. Add curd to the semolina and mix well. Then add some water and prepare a batter like pakora batter. Add finely chopped green chillies, grated ginger, and salt to taste, and mix well. Cover the batter and keep it aside for 15 minutes so that it can swell.

Now chop capsicum, cabbage, and tomato, and keep them in a bowl. After the resting time, add baking soda to the batter and mix it. If the batter seems too thick, add a little water.

Heat an iron pan/tawa on medium flame. When it is hot, spread some oil on it. Add mustard seeds and let them crackle. Pour 2 ladlefuls of the batter on the pan and spread it in a circular motion. Spread chopped vegetables evenly on top of the Uttapam. Sprinkle some green coriander. Pour a little oil around the Uttapam and press the vegetables lightly with the back of the ladle. Cook the Uttapam on both sides until golden.

Tasty Semolina Uttapam is ready for breakfast. Prepare the remaining Uttapams in the same way and serve them with coconut chutney.
