Crispy Namak Pare

Namak Pare

Ingredients:

  • 500 grams all-purpose flour,
  • about 1/2 cup refined oil,
  • salt as per taste,
  • 1/2 teaspoon carom seeds,
  • oil for deep frying as per requirement,
  • pinch of baking soda.

Method of Preparation:

First, mix salt, carom seeds, and a pinch of baking soda with the flour. Add oil and mix well. The oil should be thoroughly mixed throughout the flour.

Rub the oil into the flour with your hands. If it forms a laddu-like consistency, the oil is appropriate. If not, add a little more.

Now add water little by little and knead the dough into a stiff dough. Cover and let it sit for a while. Knead again lightly with a little oil. Heat oil on the stove over high heat. Now divide the dough into large balls and roll it into a thin sheet. Cut into  diamond shapes.

When the oil is sufficiently hot, reduce the heat to low, add the cut pieces, and stir constantly. Keep heat low to medium throughout. Fry until golden and crisp. It should take about 7-8 minutes, otherwise they won’t become crispy. Remove from oil and prepare the rest of the Namak Pare from the remaining dough in the same way. Serve with hot tea.
