Aloo-Suji Bites Instructions
- Grind the two potatoes in a mixer jar to form a smooth paste. Transfer the potato purée to a large bowl. Add the semolina, gram flour, ginger paste and chopped green chillies. Add the turmeric powder, sugar, salt, curd and oil. Mix well.
- Add the water and mix thoroughly to prepare a smooth batter. Cover and leave it to rest for 20 minutes. Add the Eno fruit salt and mix well until the batter becomes frothy. Pour the batter into a pan and steam for 20 minutes. Once the mixture has cooled completely, cut it into bite-sized pieces.
- Heat 2 tbsp oil in a pan and sauté the potato-suji cubes until golden brown.
- For the tempering, heat 2 tsp oil in a pan. Add the mustard seeds, cumin seeds, turmeric powder and red chilli powder. Sauté over a low heat.
- Gently add the roasted potato-suji cubes and mix well to coat them with the spices. Garnish with chopped fresh coriander and mix well. Serve hot with green chutney or tomato sauce.
