Stuffed Bitter Gourd

Ingredients:

  • Bitter gourds – 5
  • Oil – 2 tsp
  • Roasted gram – 3 tsp
  • Kashmiri red chilli powder – 1 tsp
  • Turmeric powder – ½ tsp
  • Coriander powder – 2 tsp
  • Roasted cumin powder – 1 tsp
  • Asafoetida – a pinch
  • Salt – to taste
  • Fennel powder – 2 tsp
  • Raw mango (grated) – 1

Method of Preparation:

In a mixer jar, add roasted gram, Kashmiri red chilli powder, turmeric powder, coriander powder, roasted cumin powder, asafoetida, salt, and fennel powder. Grind them coarsely.

Wash the bitter gourds, peel them, and make a long slit to remove the seeds. Rub salt over them and keep aside for 30 minutes to reduce bitterness.

Heat a little oil in a pan and sauté the ground spices on low heat. Add the grated raw mango and mix well. Let the mixture cool. Stuff this mixture into the bitter gourds.

Heat oil in a pan and place the stuffed bitter gourds in it. Cover and cook on low heat. Turn them occasionally so they cook evenly from all sides. Once fully cooked, switch off the heat. Garnish with fresh coriander leaves.

Serve hot with roti, parathas, or dal-rice.
